Little Millet Curd Rice

Millet curd rice is a straightforward meal using yoghurt and millet that is wholesome, probiotic-packed, and simple. If you already have cooked millet on hand, you can prepare this meal in only 10 minutes and have it for breakfast, lunch, or dinner.

Ingredients:

  • Little millet - 1/2 cup
  • Water - 1 cup
  • Curd - 3/4 cup
  • Milk - 1/4 cup
  • Carrot -3 tbsp
  • Grated coriander leaves - 2 teaspoons
  • Salt - to taste

Recipe:

  • Leave the water to boil, add the millet, and cook for a few minutes until tender.
  • Next, mash the millet in a bowl and combine it with the milk and curd.
  • Add the seasonings "to temper" the oil in the pan and let it spatter.
  • Add the rice, coriander leaves, grated carrot, and the required salt amount after the tempering. 
  • Stir well.
  • Serve refrigerated and top with vegetables and coriander leaves.
