4 Best Navratri Recipes Made From Millets


Navratri is the most joyous and hectic time of the year. With its many puja rituals, religious activities, and feasting, Navratri also entails the art of fasting. Hence, this article lists some Navratri fasting or Vrat recipes made of millets to cleanse your body, mind, and aura to fine-tune your soul.

 

1. Amaranta Paratha or Rajgira Roti

Rajgira/Amaranta paratha is a gluten-free flatbread prepared from amaranth flour (Rajgira atta in Hindi), mashed potatoes, spices, and herbs. 

These Rajgira parathas are typically prepared during fasting or Vrat days. 

Rajgira is a common component of Hindu religious fasting.

Process:

  1. Boil two medium size potatoes and cook until it becomes of a mashable consistency.
  2. In a bowl, take amaranth/Rajgira flour in the required proportion. 
  3. Mash the potatoes, mix well with amaranth flour, and knead well until you make a soft dough. 
  4. Crush one green chili and add it to the mixture with little water. 
  5. Roll it like a paratha/roti and place it in a hot Tava, skillet, or frying pan. 

 

2. Amaranth Kheer

 t's another simple, easy-to-make dessert with Rajgira/ amaranth/ Ramdana grains. This kheer offers a crunchy texture, as opposed to other pudding or kheer that taste smooth on the mouth. The crunchy texture comes from the amaranth grains, and it is this crunch that distinguishes this dessert from others. And the recipe is as simple and familiar as any other type of kheer.

Process:

  1. Cook the amaranth grains in a pressure cooker to save time. 
  2. Boil it and add hot milk, sugar, cardamom, and a pinch of salt to enhance the flavor.  
  3. Leave it for a good boil, and serve with rotis or puris when it becomes thick. 

 

3. Barnyard millet pudding

During fasting days, barnyard millet pudding or Samvat rice kheer is a commonly made recipe known as Vrat ke chawal ki kheer. Barnyard millet is a nutritious millet that is an excellent alternative to rice or Rava/semolina. In fact, you can make polao, pudding, porridge, upma, and a variety of other delightful dishes from barnyard millet. 

Process:

The recipe is the same as Amaranth Kheer. Only the grain will change. You can garnish it with fresh rose petals and dry fruits like cashews and nuts and serve it hot with puris. 

 

4. Barnyard Uttapam

Barnyard Uttapam is an excellent, tasty recipe that can be prepared for religious fasting days, such as Navratri, Ekadashi, and others. This dish does not require any grinding or fermentation. Since this uttapam is made with barnyard millet flour, the flavour will differ from regular uttapam.

Process:

  1. Make a thick batter by mixing barnyard millet flour and water. It will be dosa-like consistency. 
  2. Add cumin seeds, coriander leaves, and rock salt (primarily used in fasting recipes).
  3. Heat a griddle or Tava and spread some oil. 
  4. Pour a little batter in the shape of a pancake and add finely chopped green chilies, tomatoes and coriander as toppings. 
  5. Sprinkle some oil from the sides. 
  6. After the base is cooked, flip it to another side to cook.
